Coriander has to be used at the right time in right amount. Lightly roasted and ground seeds give the best taste when added in hot cooking fat (like ghee) in the beginning of cooking a dish.
Heat a pan over medium heat, add coriander seeds. Lightly dry roast stirring frequently over medium-low heat for 2 – 3 minutes.
Let it cool to the room temperature. Grind in a coffee grinder or dry grinder of magic bullet.
Store in an airtight container.
